“Hinodezakari”
Matsumoto Sake Brewing Co. LTD has been thoroughly committed to producing sake for over 200 years since its establishment in the late Edo period. During this period, we have inherited our forerunner’s enterprising spirit and successfully developed optimal refrigeration devices for sake breweries and a device that replicates the sill and expertise of a master toji (head brewer) who had worked for Matsumoto for 48 years.
Sake including "Hinodezakari" is still brewed based on a polite brewing of the Tajima toji style. Also, every winter, hard work is put into the brewing process with our late owner’s precious words, “Do not let the content of the cellar overage even if the cellar itself grows old.”

“Hinodezakari”(Junmaishu Series - Pure rice sake series)
The brewing of “Jumaishu (pure rice sake)” has been the basic line from the 1960s. Matsumoto Sake Brewing’s motto, "There is no technology superior to the raw material.", this motto and the rich quality of the rice is available in the junmaishu.
Making the best use of the finest sake rice, we brew the elegant and grateful taste with top class techniques and the toji’s sincerity.
The sake cellar “Daikokugura” which has been active since Taisho-period and the octagon brick chimney is the background of Matsumoto Sake Brewery that supports the quality taste of the sake.

“Hinodezakari Seasonal Limited Sake”
Beginning with a preparation of the rice harvested in autumn, the new brew is ready in winter, is stored and after the summer, "Hiyaoroshi" is shipped. We prepare sake by this traditional seasonal cycle so that it can be enjoyed with the sense of the season in Japan.
